A delicious, saucy chicken dinner featuring a rich garlic, tomato, spinach, and cream sauce.

extra-virgin olive oil
boneless, skinless chicken breasts
Parmesan, finely grated
Lemon wedges
Kosher salt
Freshly ground black pepper
dried oregano
unsalted butter
garlic cloves, minced
cherry tomatoes, halved
baby spinach
heavy cream
all-purpose flour
baking soda
salt
butter, softened
brown sugar
eggs, beaten
mashed ripe bananas

Method

In a large skillet over medium heat, heat {extra-virgin olive oil}. Sprinkle {boneless, skinless chicken breasts} all over with {Kosher salt}, {Freshly ground black pepper}, and {dried oregano}. Cook, turning halfway through, until browned on both sides and an instant-read thermometer inserted into thickest part registers 165°, about 8 minutes per side. Transfer to a plate.
In same skillet over medium heat, melt {unsalted butter}. Stir in {garlic cloves, minced} and cook, stirring, until fragrant, about 1 minute. Add {cherry tomatoes, halved}; season with {Kosher salt} and {Freshly ground black pepper}. Cook, stirring, until tomatoes are beginning to burst, about 5 minutes. Add {baby spinach} and cook, stirring, until spinach is beginning to wilt, 2 to 3 minutes more.
Stir in {heavy cream} and {Parmesan, finely grated} and bring to a simmer. Reduce heat to low and continue to simmer, stirring occasionally, until sauce is slightly reduced, about 3 minutes. Return {boneless, skinless chicken breasts} to skillet and cook, stirring occasionally, until heated through, 5 to 7 minutes.
Divide {boneless, skinless chicken breasts} among plates. Spoon sauce over. Serve with {Lemon wedges} alongside.
Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan.
Whisk flour, baking soda, and salt in a bowl.
Cream butter and brown sugar. Beat in eggs and mashed bananas.
Fold dry ingredients into wet mixture until just combined.
Pour into pan and bake 60–65 minutes until a toothpick comes out clean.
Cool in pan 10 minutes, then turn out onto a rack.
